I have just begun using qBT and to exit from it I have always used File->Exit qBT from he webui.
Just to be on the safe side, can you please confirm that this command shuts down qBT completely and that there is no internet activity left (neither upload nor download) after that?

Yeah it should kill qBittorrent.
If you are in such a sensitive situation, you could install Chrome Remote on the host and double-check using your phone or PC.
Or if it's a server, just check if the process has been "Killed".
But it's a bit over-thinking at this point, it should always kill the client.

Even after qBitTorrent is closed, small amounts of internet activity remains from peers and seeds retrying your ip address.
There may also be DHT peers/seeds trying to connect the same way.
