Very simply: How do I "stop" a torrent?

When I used utorrent, I liked to keep a list of my torrents in "completed" to ease navigation etc.
In the right click menu for utorrent, there is no "stop" option, only "pause".
This would be fine as an alternative but for 2 points:
1. Paused torrents move back into "downloading" sometimes after I move the source files.
2. It is difficult to tell the difference between torrents I wish to seed and those I do not when they're all mashed up in my "completed" folder.
Does this simply functionality exist? Surely I don't have to choose between only "pause" and a 2-stage prompt "delete"?
