I don't know what you mean by "in grey" or "not downloaded". I'm guessing you meant "do not download" .
If you mark a file as "do not download" before it's been written to, qB may still need to download and store parts of it or the whole. These parts go into a hidden file in the torrent's main directory. This file is deleted by qB when the torrent is removed. If the file has already been written out it's just left there. It may, or may not, be sparse.
This is what I've seen in FreeBSD, it may be different in Windows.
