I'm using Windows 10 64-bit and want to use qBittorrent v4.1.4 on it to seed around 100-150 active torrents.
I have 8 GB of Ram and a 1TB SATA-III 7200 RPM 64MB hard drive (no SSD...)
Witch version would be more suitable for the above configuration?

Both 32-bit and 64-bit versions of qBT should be just fine.

So the 64-bit version wouldn't be a resource hog on a x64 8GB system with more than a hundred active torrents? Active in seed mode i mean, i won't be DL/UL dousins of torrents in the same time.

Correct -- the 64bit one won't use significantly more ram UNLESS you set its cache higher than the 32bit one can be set for.
The 32bit one's cache WILL crash if set above ~1000 MB size.
The 64bit one's cache would probably crash your computer if set to its max size of 4096 MB if you had enough busy torrents and you were doing stuff to fill up the remaining 2 GB available ram.

So, for the 64-bit version, do i leave the cache at it's default value and only change it if i encounter problems then? 
Sorry, i'm really new at this cache thing, never had to configure it in µTorrent so i'm a bit clueless as to what value it should be (if changed).

qBT's default cache value should be -1 (auto-configure), which from what I've read is either 1/4th or 1/8th your total ram, or max cache size...whichever is smaller.
So even the qBT 64bit version's default cache size shouldn't be larger than 2 GB and should not need configuring.
